- 1 tsp olive oil
- 2 red peppers, sliced
- 250g mushrooms, sliced
- Handful spinach
- 1 red onion, halved and sliced
- 100g grated cheese
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp chopped chives
- 8 eggs
- 4 plum tomatoes, seeds removed and diced
Pre-heat the oven to 200°C/Gas Mark 6 and pour the oil into an ovenproof frying pan (or set an oven grill to high and use a frying pan being careful to cover the handle.)Step 2
Place the frying pan over a high heat and add the peppers, onion and mushrooms to the pan. Stir for 4-5 minutes to soften.Step 3
Add the diced tomato, spinach, salt and beaten eggs to the pan and begin to swirl around, until the base starts to set. Sprinkle over the grated cheese.Step 4
Place the pan in the oven (or under the hot grill) and continue to cook for a further 6-7 minutes until the eggs are set.Step 5
Add the chives and cut into 8 portions and serve.
