Breakfast Frittata

Ingredients


  • 1 tsp olive oil
  • 2 red peppers, sliced
  • 250g mushrooms, sliced
  • Handful spinach
  • 1 red onion, halved and sliced
  • 100g grated cheese
  • ½ tsp sea salt 
  • ¼ tsp black pepper
  • 2 tbsp chopped chives
  • 8 eggs
  • 4 plum tomatoes, seeds removed and diced


Instructions

Step 1

Pre-heat the oven to 200°C/Gas Mark 6 and pour the oil into an ovenproof frying pan (or set an oven grill to high and use a frying pan being careful to cover the handle.)

Step 2

Place the frying pan over a high heat and add the peppers, onion and mushrooms to the pan. Stir for 4-5 minutes to soften.

Step 3

Add the diced tomato, spinach, salt and beaten eggs to the pan and begin to swirl around, until the base starts to set.  Sprinkle over the grated cheese.

Step 4

Place the pan in the oven (or under the hot grill) and continue to cook for a further 6-7 minutes until the eggs are set.

Step 5

Add the chives and cut into 8 portions and serve.
