Breakfast Frittata

Ingredients
- 1 tsp olive oil
- 2 red peppers, sliced
- 250g mushrooms, sliced
- Handful spinach
- 1 red onion, halved and sliced
- 100g grated cheese
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp chopped chives
- 8 eggs
- 4 plum tomatoes, seeds removed and diced
Instructions
Step 1Pre-heat the oven to 200°C/Gas Mark 6 and pour the oil into an ovenproof frying pan (or set an oven grill to high and use a frying pan being careful to cover the handle.)
Step 2Place the frying pan over a high heat and add the peppers, onion and mushrooms to the pan. Stir for 4-5 minutes to soften.
Step 3Add the diced tomato, spinach, salt and beaten eggs to the pan and begin to swirl around, until the base starts to set. Sprinkle over the grated cheese.
Step 4Place the pan in the oven (or under the hot grill) and continue to cook for a further 6-7 minutes until the eggs are set.
Step 5Add the chives and cut into 8 portions and serve.
