Ingredients


Falafels:
  • ½ red onion, diced
  • 2 garlic cloves, crushed
  • 30g fresh parsley
  • 30g fresh coriander
  • ½ tsp sea salt
  • 2x 400g tins chickpeas
  • 1 lemon, zest and juice
  • 200g any plain flour
  • 1 tsp ground cumin
  • 1-2 tbsp olive oil
  • 4 large pitta breads, halved, use gluten free if nescessary
  • 2 baby gem lettuces
Dressing:
  • 2 tbsp coconut yoghurt
  • 1 small garlic clove grated
  • 1 tsp lemon zest
  • 1 tbsp olive oil

Instructions

Step 1

Place the red onion, garlic, parsley, coriander, sea salt, chickpea, lemon, zest and juice, flour and cumin into a food processor and blend until you have a sticky mix.

Step 2

Shape into 12 small falafels and place in the fridge for 1-2 hours to firm up.

Step 3

When ready to serve, heat the oil in a frying pan and cook the bites for 2-3 minutes on both sides until golden and cooked.

Step 4

Mix the dressing ingredients together in a bowl.

Step 5

Divide the lettuce leaves between the pittas and top with the falafels and dressing.
