Ingredients
Falafels:
- ½ red onion, diced
- 2 garlic cloves, crushed
- 30g fresh parsley
- 30g fresh coriander
- ½ tsp sea salt
- 2x 400g tins chickpeas
- 1 lemon, zest and juice
- 200g any plain flour
- 1 tsp ground cumin
- 1-2 tbsp olive oil
- 4 large pitta breads, halved, use gluten free if nescessary
- 2 baby gem lettuces
- 2 tbsp coconut yoghurt
- 1 small garlic clove grated
- 1 tsp lemon zest
- 1 tbsp olive oil
Instructions
Step 1Place the red onion, garlic, parsley, coriander, sea salt, chickpea, lemon, zest and juice, flour and cumin into a food processor and blend until you have a sticky mix.
Step 2Shape into 12 small falafels and place in the fridge for 1-2 hours to firm up.
Step 3When ready to serve, heat the oil in a frying pan and cook the bites for 2-3 minutes on both sides until golden and cooked.
Step 4Mix the dressing ingredients together in a bowl.
Step 5Divide the lettuce leaves between the pittas and top with the falafels and dressing.
