Mini Tortilla Quiches

Ingredients
- 2 Large Tortilla Wraps Or Gluten-Free Wraps
- 4 Eggs
- 75G Cooked And Chopped Vegetables Of Your Choice Such As ;Peas, Beans, Carrots, Cauliflower, Broccoli, Spinach Etc.
- 4 Cherry Tomatoes, halved
- 50G Goats Or Feta Cheese, crumbled
Instructions
Step 1Preheat the oven to 180C.
Step 2Using a 12cm cutter (or a small plate) cut circles from the large tortilla wraps – you should get 6- 8.
Step 3Use the cut-out tortilla circles to line the holes of a muffin tin pushing them down into the holes to make cases.
Step 4In a bowl or jug beat the eggs and pour into the tortilla cases.
Step 5Evenly share out the chopped vegetables into each case.
Step 6Top each case with cheese and 1/2 a cherry tomato.
Step 7Bake for 15 minutes until the egg has set.
Step 8Serve as is for a handy on the go breakfast or as lunch with a salad.
