Muffins with Chocolate Avocado Cream

At the moment, we’re in unprecedented times and many of us are looking for suitable activities to do with our children, so here is a fun and healthier recipe for cupcakes to make with children.

These are like breakfast muffins as they not too sweet, but the avocado cream makes them seem very indulgent!

  • 220 Calories (for muffins without chocolate avocado cream)

  • Makes 12

Ingredients


  • 200g flour
  • 100g oats
  • 2 bananas
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1 cup of milk of choice
  • 1/4 cup coconut oil (Kerry Gold butter works well also)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup of blueberries (if you are using frozen do not thaw)

 

For the Chocolate Avocado Cream

  • 2 Ripe Avocados
  • 100g chocolate, I used dark
  • 1 Tablespoon Oil - Coconut or Olive oil
  • 1 ripe banana
  • 3 Tablespoons honey or Maple Syrup
  • 1 Tablespoon Fresh Lemon Juice
  • Pinch of salt 

Instructions

Step 1

Preheat oven at 180 degrees

 

Step 2

In a bowl, combine all ingredients and mix well. You can use a food processor, if you do not have access to a food processor, you can mix with a wooden spoon in a bowl. Fold the blueberries into the mixture.

 

Step 3
Pour the mixture into a muffin tray lined with paper cases.

Step 4

Bake for 20 minutes


Step 5
For the chocolate avocado cream, add the ripe avocados, banana, lemon juice and salt to a food processor and blend until completely smooth.

Step 6

Have a saucepan with water simmering, place a bowl over and add 100g chocolate of choice, and melt the chocolate over the water, once melted , add the honey and the tablespoon of oil to melted chocolate mix. Add the melted chocolate to blender, and blend together until chocolate is well mixed.

Step 7

Once cupcakes are removed from the oven, and let cool for 20-30 minutes, add the cream to the muffins. I used a homemade piping bag with a small food storage bag!

Step 8

Add sprinkles of choice or dessicated coconut and enjoy!
