Oat Scones, Chia Seed Jam & Vanila Cream

Ingredients

  • 360g porridge Oats
  • 500g 0% Greek yoghurt.
  • 1 egg
  • 2 tsp baking powder
  • Pinch of salt.
  • 10g honey (optional)
  • handful nuts & seeds (optional)
For Chia Jam
  • 100g of Berries (frozen work fine here also such as Strawberries, Raspberries, Blackberries etc)
  • 2 Teaspoons of Chia Seeds
  • 2 Teaspoons of Maple Syrup or Honey
For Vanilla Cream

  • 250 ml cream - such as dairyfree cream or chilled coconut milk
  • 1 tablespoon of honey or maple syrup
  • 1 Tablespoon vanilla extract

Instructions

Step 1
Mix all the dry ingredients in a bowl.

Step 2
Separately mix the wet ingredients and then add to the dry ingredients.

Step 3
Shape into Scones (makes 12) or place in a lined loaf tin and bake at 180 degrees for 25-35 mins, depending on your oven.

Step 4
While these are in the oven, Add the berries, chia seeds and honey to a blender and blend on high until smooth. Store in fridge until needed to add to scones.

Step 5
Place the cream, honey/maple syrup and vanilla extract in a mixing bowl and whip until soft peaks form using a whisk or handheld mixer. Use dairy free if applicable, available from larger supermarkets or some health food stores, or chill a tin or coconut milk in the fridge and use this as a dairy free cream, if required.
