Salmon and Scrambled Egg on Sourdough

Ingredients

  • 4 eggs
  • 1 tbsp milk (of choice)
  • 150g smoked salmon or Smoked Haddock
  • 2 tbsp chopped fresh chives
  • Black pepper
  • 2 slices sourdough bread - (look out for authentic sourdough made from starter culture)

Instructions

Step 1

If using haddock, Heat a small pan of water until boiling and add the haddock fillet. Simmer for 10-12 minutes until flaky and cooked.

Step 2

Meanwhile, beat the eggs in a jug and pour into a saucepan.  Add the milk and stir over a medium heat for 8-10 minutes, until just scrambled and soft.

Step 3

Toast the bread and place onto two plates.

Step 4

Flake the cooked haddock/Smoked Salmon into the scrambled eggs and stir.

Step 5

Mix in the chopped chives.

Step 6

Divide the egg mix between the two slices of bread and add pepper to serve.
