Salmon and Scrambled Egg on Sourdough

Ingredients
- 4 eggs
- 1 tbsp milk (of choice)
- 150g smoked salmon or Smoked Haddock
- 2 tbsp chopped fresh chives
- Black pepper
- 2 slices sourdough bread - (look out for authentic sourdough made from starter culture)
Instructions
Step 1If using haddock, Heat a small pan of water until boiling and add the haddock fillet. Simmer for 10-12 minutes until flaky and cooked.
Step 2Meanwhile, beat the eggs in a jug and pour into a saucepan. Add the milk and stir over a medium heat for 8-10 minutes, until just scrambled and soft.
Step 3Toast the bread and place onto two plates.
Step 4Flake the cooked haddock/Smoked Salmon into the scrambled eggs and stir.
Step 5Mix in the chopped chives.
Step 6Divide the egg mix between the two slices of bread and add pepper to serve.
